Book Description

Victor Ceserani was a very successful chef who retrained as a teacher. He and his colleague Ronald Kinton were both founding members of staff at the Acton Hotel School, which is now part of Brunel University London. They wrote this work aimed specifically at catering students. Because the book was written to help students prepare for national qualifications, the authors continually revised it. The 14th edition was published in 2019, but this first edition of 1962 is scarce.
